In the discussion, I linked to the purine count for crawfish. But gout diet planning is about more than purines. Because gout dieters need to focus on net changes in blood uric acid. Anyway, this particular discussion is for Gout Foodies. So we only need to consider if the recipe can form part of a good foundation diet.

There is no reason why this crawfish meal cannot be part of a good gout foundation diet. And I’ll explain why in my review of the recipe. But for now, here is an ingredient list. Then you can discuss any concerns you have about this recipe.

Crawfish Meal for Gout Ingredients

1 pound unsalted butter
2 cups diced yellow onion
1 cup diced green bell pepper
1 cup diced celery
1 tablespoon minced garlic
1 teaspoon cayenne pepper
2 pounds Louisiana crawfish tail meat
¼ cup all-purpose flour
1½ cups crawfish stock or seafood stock
Kosher salt and freshly ground black pepper
Dash of hot sauce
¼ cup chopped flat-leaf parsley
1 cup diced green onion tops
6 cups cooked Louisiana long-grain white rice, such as Supreme

Interestingly, while researching this recipe, I discovered that crawfish might contain nutrients that go some way to reducing the effects of its purine content. Again, I’ll include this in my full recipe review. But for now, you might be interested in reading Astaxanthin and Uric Acid Research.
